Team
The
Yuca kitchen is headed by Executive Chef Ramon Medrano who has been with
Yuca when we first opened in 1989. Ramon, who worked as a Sous Chef for
the famous Douglas Rodriguez, is responsible for making sure that each
diner enjoys the Nuevo Latino Cuisine and overseas the preparation, creativity
and passion for all of our items that highlight our Cuban food. Chef Josefa
Balbin serves Yuca as our exclusive pastry chef. Chef Josefa has been
with Yuca since our inception and is the person most responsible for inventing
most of the dishes on our menu. Chef Josefa trained former master chef
Douglas Rodriguez, (creator of Nuevo Latino Cuisine) whose cookbook Nuevo
Latino owes heavily to Balbin's instruction.
